Diana Pappas started paying a lot more attention to what she was eating when she was diagnosed with Multiple Sclerosis. She was 25. Over twenty years later, she began feeling pretty darn good. She needed to pay it forward. So, Diana attended the five-month program at the Natural Gourmet Institute. She came out with a lot more knowledge but wasn’t sure what to do with it. There was no set moment when Diana thought, “I’m going to open a pie company!” It started one afternoon when she made her kid a pumpkin pie. Then she made another one. Then she couldn’t stop. With every pie, she’d change something. She kept playing with the recipe. A year later Diana had pies that were Vegan, Gluten Free, and Paleo; she thought they were delicious! She wondered if anyone else thought they were too. It turns out, they did! And so, a couple of years later, here she is; The Pie Lady.
